Starting with the Ryzen 5 3600 x Ryzen 5 3600X, the differences are The TDP, the vanilla one has a base Tdp of 65W with the wraith stealth cooler and, the X version has 95W and wraith spire cooler. The clock, 3.6 base GHz to the 3600 up to 4.2Ghz, and 3.8 to the 3600X up to 4.4 GHz. And obviously, there’s also some price increment.

About the Ryzen 5 3600 XT, usually, the Xt version of these processors is meant for those who like to push the processor, with aggressive overclock. As seen, this processor is a mid-range one; thus, the recommended graphics card would be up to an Rtx 2070 Super, above that you would lose a lot of fps for failing to reach the full potential of the graphics card.
About which one to choose between the different versions may depend on your necessities, since the differences in performance are such minimum. It is also important to remember that, with a Tdp relatively high of the Ryzen 5 3600X and Ryzen 5 3600XT, you would have to invest in a motherboard with a good refrigeration system, thus taking off the limitation of investment only on the processor.
I would opt to choose the Ryzen 5 3600 vanilla for gaming. This processor would be recommended for you if you have some low-range processor like a Ryzen 3, 5, of first-generation and want to upgrade your pc to play most actual games, at least in 1440p, and don’t want to buy an expensive card, like the Rtx 2080 above.
